package linguine or spaghetti
3 tbsp. olive oil
bunch broccoli rabe
1/4 tsp. crushed red pepper
1/2 c. golden raisins
can anchovy fillets
- In saucepot, prepare linguine as label directs, using 2 teaspoons salt in water. Drain linguine, reserving 1/4 cup pasta cooking water.
- Meanwhile, in 5-quart Dutch oven over medium heat, in hot olive oil, cook garlic until golden. Increase heat to medium-high. Add broccoli rabe, crushed red pepper, and 3/4 teaspoon salt; cook, stirring occasionally, until broccoli rabe wilts. Add raisins and continue cooking, stirring, until broccoli rabe is tender-crisp.
- In same saucepot used for linguine over medium heat, cook anchovies with their oil, stirring, until anchovies just begin to dissolve. Remove from heat; add linguine, tossing to coat.
- Add linguine mixture and reserved pasta cooking water to broccoli rabe mixture, tossing to combine well.
